16 oz firm tofu, smoked or marinated 6 oz shiitake mushrooms 1 sprig thyme 1 sprig oregano 1 red bell pepper 1 red onion 2 tsp. olive oil Wooden or bamboo skewers
Smoke or marinate the tofu. It can be smoked on a grill with hickory or marinated in a bit of soy sauce and ginger. Dice tofu in 1-inch cubes. Sautee the mushrooms lightly and season with herbs. Grill the red pepper and red onion for only 2 minutes and quarter in approximately 1-inch squares. Skewer the vegetables and tofu beginning with the onion and pepper, and following with the mushrooms, ending the skewer with red pepper and red onion. Baste with a little bit of the oil and grill for about 7 minutes on all sides. |
